Rice and Peas

2lbs Rice

½ pint red peas (red kidney beans)

1 large coconut or 1 tin of coconut cream

1 clove garlic

4 Stalks scallion

2 Sprigs thyme

½ tablespoon black pepper

2 Quarts hot water

Salt to taste

1 Whole Pepper (green)

    WHite rice preferred

  • 2lbs of rice

METHOD

  1. Cook peas over high heat until they are almost tender. 
  2. Grate coconut and using the hot water to extract milk through sieve. 
  3. Add coconut milk or cream to almost cooked peas. 
  4. Cook for ten minutes then add rice, pepper, thyme, scallion, black pepper salt and garlic. 
  5. Allow to cook for twenty minutes or until rice is tender.
